so busy

i’ve had so much going on the last few days, i can’t wait to catch up on sleep. tomorrow afternoon i’ve GOT to get my valentines crafts knocked out, because next weekend i’m in florida for my birthday! yay!

your mom goes to college

i’m waiting for a phone call right now to discuss enrolling in college. i went a semester and a half when i was like, 19 and i hated it. i never wanted to go to college, so i didn’t. i completed one semester and then about 3 weeks into my second semester i was in a car accident and ended up withdrawing from my classes and never going back.

as far as my job goes, i make $1 less/hr than the two women i work with who have degrees, so earning a degree isn’t going to get me much in the way of a raise, but i like the idea of doing it at this point in my life. plus it’s just online.

part of me is mega excited, part of me is terrified. that must mean it’s the right decision, right?

gimme a break, will ya?

so at the advice of the ER doctor the other day, i didn’t put anything into my body aside from clear fluids for a few days, and then introduced the BRAT diet. meaning i wasn’t taking my medicines…and now i have a killer migraine. i didn’t sleep last night, i got possibly a combined total of 2 hours because my head hurt so much. we got a new baby at work today and she was so loud. i know it was her first day, i just didn’t have it in me to deal with it. she got everyone all riled up and off their schedules, it was a really horrible day. i’m waiting for a load of laundry to finish in the dryer and then i’m going to bed, i really hope to get some sleep.

here’s what i got accomplished this weekend:: the backgrounds of my valentines for my craftster swap, and i made a delicious pizza dip. none of the pictures are good because photographically speaking, i’m a moron.

i’m also doing an altered altoid tin swap, where we alter the tin on the outside and then fill it with goodies, the theme is valentines day, so it’s red and pink so far. i’m going for a textured look and i’ll paint on it with white. not sure exactly what yet though.

here’s a quick pic of the dip on the stove–i am so not one of those “staging” bloggers. when i post pictures it’s of what things actually look like, in the process. i don’t have the time to stop and clean every time i want to take a picture.

INGREDIENTS::

1 can pizza sauce
1 cup pepperoni
2 heaping tablespoons of mushrooms
3 oz cream cheese
1 1/2 cup mozzarella cheese
oregano
minced garlic
black pepper

-in a saucepan over medium heat combine sauce, pepperoni, mushrooms, oregano, garlic and black pepper.
-cook until heated through, roughly 5-7 minutes
-add cream cheese and mozzarella
-stir until well combined
-turn heat to low, stir occasionally
-serve with toasted bread or breadsticks

turkey chili mmm mmm gooooood.

there’s a winter storm coming tomorrow, 2-6″ of snow and ice, and that’s just the first forecasts, so it could be more til it’s said and done. if i’m snowed in, instead of going to the punk rock flea market i’d rather go to, i may end up making this. if i do, i will definitely post pics, but that’s only if i get to the grocery store before it starts…which it may do overnight. boy you gotta love those weathermen, they know it all…eh?!

INGREDIENTS::

2 cans each:
black beans
chili beans
kidney beans

1lb ground turkey
1 large can of diced tomatoes
1 small can of tomato paste

one large onion–diced
oregano
chili powder
red pepper flakes
minced garlic
salt/pepper

1) before i put the turkey in the pan i season it with salt, pepper and chili powder
2) brown the turkey with the diced onion and minced garlic
3) add all the cans of beans to your slow cooker, i drain ONE of each of the 2 cans of beans, leaving one can’s juices in the pot
4) add diced tomatoes and tomato paste to the slow cooker
5) add turkey, onions and garlic to the slow cooker and cook on high 4-6 hours, stirring occasionally
[season with oregano, chili powder, red pepper flakes, garlic, salt & pepper to taste]

friday

so i’m still off work, because of the superflu. i’m still really beat but definitely on the upswing. well, until my stomach just made the crazy noise that sounded like a duck saying “waaaaah” until just now i thought i was on the upswing…i’m not really sure what that noise meant…i guess we’ll see…

so for the craftiness of today’s post i’m just going to show you a cute little picture frame i made for a little girl in my class at daycare. i bought a $1 wooden unfinished frame at michael’s and used mod podge to cover it in layers and layers of tissue paper. then i hot glued letters i painted white onto the frame. simple, easy and in the long run it was less than $2 per frame. i made them for each of the kids in my class at work, but bella’s is the only picture i can seem to find right now.

later, i plan to post my recipe for chili…because we’re supposed to get a “winter storm” here tomorrow and i’ll be wishing i was making it…however the problem is, i’m not good at recipes. i tend to figure out how to make something and then i just throw it together and it’s different each time. but i have to send the recipe to kristine[i’m going to fl in 2 weeeeeeeks! weeeeeee!] so i figured when i go to my mom’s to get it, i should post it here too!
